hi friends, lovers, & people probably related to me —
116 — went to a yoga class that reminded me that i spent almost 40hrs in a car over the holidays & on a v. humbling run this week1 — stars they are just like us
soup for sick girls #2
it’s chilly & damp out & you feel like you’ve had a cold for so long it’s become part of your personality at this point. this is the soup for that.
ingredients
boneless skinless chicken thighs
ginger (1 medium sized knob)
garlic (a shit ton, like 7 big cloves)
serranos (3)
shallots (2 bigger ones)
scallions (2 bunches, 3 if they are on sale)
chicken broth / stock or some better than bouillon + water
bell peppers
spinach
sesame oil
chili crisp
fish sauce
soy sauce
salt & pepper
udon noodles
olive oil
steps
1st in a large dutch oven or heavy bottom pot splash a lil olive oil, all the grated garlic, ginger + the shallots, cook till v. fragrant — add in your chicken getting a lil bit of color on all sides, and it starts to stick to the bottom of the pot. pour in your broth or bouillon + water, a lil salt & pepper, a lil chili crisp, a splash of soy sauce & a splash of fish sauce) & the serranos. place the lid over it and cook until chicken easily shreds.
2nd add in your bell peppers & spinach with a lil more salt & pepper — burn your mouth tasting the broth. let it meld a little while longer, let the peppers soften. add in the udon noodles ( i found a little already cooked packet @ cermak but just use your favorite). think about how much you can’t wait to go to bed. keep the soup on the stove until the noodles are ready
3rd ladle into large bowls top with a drizzle of soy sauce & sesame oil, a lil bit more chili crisp & a shit ton of scallions. slurp until you feel a bit full & sleepy. save the rest for tomorrow & the next day & the next
particularly good things i consumed recently
florida christmas w/ the whole famdamnily — there were long walks on the beach, matching pjs, red sauce america, sleepovers, steak house night, presents, & grandma & trips to publix & margaritas @ lunch time
empanadas & churros with the irish dance girls, where erin dressed up as santa & we all got too full — missed you maureen!
i love that for you — duseks w/ kate & forrest — still thinking about that steak tartare & sad i’ll never have it again
a wonderful nye — malfadine w/ vodka sauce, charred brocolini & crispy lamb & pork meatballs showered with pecorino, lemon & parsley + so much wine & shrimp cocktail & two parties & staying out much too late
movies: the kid detective (think if encyclopedia brown grew up & was seth cohen, snarky, strange & a bit sad) saltburn (honestly not as weird as i thought it was going to be, good soundtrack), hell or high water (texas, bank robbery, the things you do for family)
le bouchon on a thursday night — cozy & delicious & decadent, 10/10 no notes — we might have contemplated a second crème brûlée
rocom saturday w/ kaitlyn & caroline — chefs special, notting hill & sour strips & mini peanut butter m&ms (which is the perfect size for peanut butter m&m’s)
currently consuming
a lil run, all the errands & a tasting @ diversey
as always,
mk
