smashburgers w/ lots of pickles, onions & special sauce

77 — i want to do a double feature of parent trap + weekend @ bernies, who’s in? i’ll order a cheap pizza + have plenty of wine + ranch — v. hi lo
cheeseburger party
so alison roman had a cheeseburger party — which made me want to have a cheeseburger party & by cheeseburger party i mean you invite 1-3 friends over to eat cheeseburgers1. (we also had cocktails + homemade potato chips w/ spicy ketchup — v. balanced)
there is no place for lettuce or tomato on this cheeseburger. this burger is a way to eat an inordinate amount of pickles & onions only
ingredients for the cheeseburgers
ground beef or ground chuck — whichever looks better
1 yellow onion
soft pillowy rolls that won’t disintegrate
american cheese
medium cheddar
1 red onion
pickles!
salt + pepper
ingredients for the special sauce
mayo (hellmans, plz c’mon)
dijon mustard
1 large clove of garlic — grated
ketchup (heinz of course)
salt + enough black pepper to make you feel something
apple cider vinegar
ingredients for the homemade potato chips (the ones from newsletter #2!!)
idaho brown potatoes (like 5 or so feeds 3 peeps w/ leftovers)
canola oil
salt
ketchup (heinz of course)
franks red hot + tamazula (for extra heat)
steps
1st peel the potatoes and using the sliced side of a box grater slice them thinly, i do not have a mandolin though that would also work. then put them in a bowl one layer, then paper towel, then one layer, than paper towel - etc. till done - put them in the freezer. mix together your ketchup + hot sauce to your desired level of spicy(ness). then prep everything else (thinly slice all your yellow onion, chop your red onion, throw together your special sauce, mine was almost equal parts mayo + dijon + some garlic + splash of vinegar & w/ just a bit of ketchup for color & slightly less black pepper than cane sauce )
2nd once all your prep is done + maybe you’ve had half a cocktail put the oven on 200 and in a large higher sided pot, heat the canola oil + then fry the potatoes in batches, letting them drain on the paper towel, salt them + putting them in the oven to keep warm.
3rd taking your ground beef or chuck, make into lil 1/4 balls, season with salt + pepper. heat your cast iron + place down your little piles of yellow onion ( i have a fairly large cast iron + could cook 4 burgers @ once) then place the little balls down + smash smash smash them. flipping as needed. once they are looking a brown + bit crispy on both sides — layer some medium cheddar + a slice of american for a nice melted cheese blanket
4th assemble the cheeseburgers, i did a generous swoosh of special sauce on both sides of the bun, then did 1 patty, pickles + another patty more pickles + lots of red onion. eat :)

on tuesday night post volleyball i had a hot dog & fries @ red hot ranch followed by an extra chocolatey shake with whip cream @ the freeze — peak summer moment #2

tamal tots + chips & salsa + spicy skinny margs for a summer friday patio happy hour with sydney — it had been too long
