119 — since marathon training hasn’t quite started yet (you can donate here to support me running it & the chicago parks foundation! & if you do you might get a treat down the line!) so i’ve been doing maintenance miles — running when it’s nice out + long walks & doing what i call an errand run when it’s not. an errand run is when you go for a little jog to an errand and pending what the errand is you jog back. it should be 2-3miles tops but definitely can be less — bc you’re just trying to move your body a little bit here & that is undeniably hard sometimes
nooks & crannies
sometimes cooking is hard & sometimes you have too many english muffins leftover from recipe testing a breakfast sandwich but no eggs. which honestly is not a bad problem to have because english muffins are delicious & adorable — all those nooks & crannies & everything. when i was a kid & (also as an adult living @ home during the pandemic) my mom would make us english muffin pizzas for lunch. crispy, saucy, cheesy with a lil sprinkle of oregano on top. they were, are perfect. if you never had an english muffin pizza that is v. sad & you should fix that right away. these lil english muffin pizzas are a bit more fancy than the standard ones but that was honestly because i had no emergency tomato sauce stashed in my freezer. goes well with a ginger ale or a good glass bottle mexican coke
ingredients
olive oil
butter, salted obviously
garlic — quite a lot
dried oregano & dried basil / italian seasoning
parm & or pecorino
full fat whole milk ricotta
red pepper flakes
honey
flaky salt
english muffins
steps
1st slice & toast your english muffins (i’m usually good for eating 2 of these, sometimes 3 on special occasions) don’t toast them too much, but just enough. if you skip this step the english muffin pizzas will be soggy & you will be sad.
2nd in a small saucepan, melt half a stick of butter, a splash of olive oil with a generous amount of grated garlic — thinking like 4/6 cloves here, add in the dried oregano & basil, taste & make sure it doesn’t need anything. then in a small microwave safe bowl mix honey & a lot of red pepper flakes together, microwave for 15 or more seconds & set aside
3rd on a tinfoil lined sheet pan arrange your english muffins, spoon the garlicky butter olive oil mixture on to all of them, sprinkle generously with parm & or pecorino and bake in the oven @ 400 till they look p. golden & your kitchen smells delicious. dollop with some cold ricotta seasoned with a lil salt & pepper, then drizzle with hot honey & a pinch of flaky salt. eat all of them in one sitting while sitting cross legged on the floor watching tv, like you did when you were 10.

when the weather is nice i want to jam pack everything into one day — a speedy lil post work run, quality time w/ audrey, ashton & kate, then lonesome w/ caroline bc a pitcher of their margs & the nachos are so consistently good
currently eyeing this & this in order to get me through the rest of winter and into spring, but unfortunately the cost of these items individually & as a fashionable bundle is remarkably undesirable to me @ the moment bc i’m trying to be a practical girl (and already bought some clothes & shoes recently, shhhhh). so someone else buy them and report back.
adventures w/ bridget — trying & failing to go the fish fry @ tumans (apparently everyone is catholic on the 2nd friday in lent) & ending up drinking some v. good healthy cocktails instead @ golden years. they quite literally have a drink that is an alcoholic green juice that is v. refreshing & good for you
katie’s birthday — everyone was home & we had crispy lemon chicken, cae sal, stuffed shells, garlic bread, & a lemon bundt cake & were v. full & happy
double scoop monday w/ ryan — the best ice cream in the city might be windy city sweets on belmont
lou malnatis — w/ meg meg, ma, aunt kelly, & uncle don— i think the perfect order is a cheese deep dish + a sausage & giard thin & a side of ranch
a quick lil catch up with megan @ blackberry (for old times sake) to brighten the week
the bee sting — a beast of a novel, spectacularly long, clever & an interesting portrayal of climate change & family dynamics

currently consuming
the beautiful weather & also in the effort to be practical - i’m in the market for a rain jacket, ideally something a-line (not a trench, already have one of those & love it bc it makes me feel like lenny briscoe) thinking something short & more casual & roomy enough to comfortably fit some chunky sweaters if needed — does anyone have a favorite?
