breakfast burrito(s) v. 2
hi friends, lovers + people probably related to me —
99 — i tried to write this on saturday afternoon but bridget called me & we chatted instead. she watching a funny old man looking dog named donkey. which is a good name for a dog but not as good as potato which is my current favorite.
if you eat this @ 2pm it’s still a breakfast burrito
way back in newsletter #9 i wrote about my breakfast burrito & love of the green salsa @ cermak produce. that burrito still is in the rotation — don’t worry. this one leans more on when you have no bacon or salsa left, but you have potatoes (you always have them — rarely buying them but they just always seem to be there, emotional support potatoes).
ingredients
1 russet potato
salt & pepper
canola oil
1-2 eggs
avocado
a lil lemon or lime
pinto beans
hot sauce (preferably one green & one red)
sour cream
giant flour tortilla
chihuahua cheese
steps
1st in a large skillet add a thin layer of oil. shred the potato using your box grater and put in a layer on the oil, add salt & pepper — press down & fry till crisy flipping as necessary. this will take a lil bit of time but you can get potato stick level crunch. once those are done drain on a paper towel & season w/ more salt & pepper
2nd heat up some pinto beans (or really whatever leftover beans you have) and smash them a bit with a fork. cube & lightly match your avocado with some lemon or lime & salt & pep. crack a couple eggs, whisk together with some water, salt & pepper, and softly scramble them with some butter.
3rd heat up your giant flour tortilla (honestly the size of these are ridiculous but great)— add a layer of potatoes, some beans, some cheese, some eggs, some more cheese & the avocado mash. gently roll up so it’s nice & snug. in a skillet add a little more oil & crisp up the burrito so it’s burnished on all sides & the inside is warm & melty.
4th slice in half & top every single bite with sour cream & hot sauce

doma w/ kaitlyn — so lovely to get up on a sleepy saturday & go on a breakfast adventure. do they have the best hashbrown? yes or yes
crustfund w/ kiera — chopped, tavern style pizza & bungalow’s pizza wine — a perfect way to spend a tuesday
double volleyball which was v. fun way to spend a wendnesday night & ensures that you’ll feel like you’ve been hit by a bus on thursday & need to go to bed @ 8:30pm
becca’s birthday party — a classy affair with great cocktails & remarkably good mini chicken sandwiches
breakfast adventure — suburbs edition, sparrow w/ megan, pillowy eggs & strong perfectly bitter cold brew. a lil walk & browse in naperthrill1
currently consuming
a nice little weekend with molly in the burbs (bc the rents went to ny to see meg meg in a play! v. exciting & fun!) — los, a lil basketball2, ice cream, a silly facetime w/ brendan, law & order, a lil run, fake errands & cooking something amazing for dinner
& reading alison roman’s latest cookbook in bed like a novel — much to the chagrin of my library hold pile

p.s. also what’s the cool new sneaker? looking for something to add to the rotation of white vejas, platform white vans (summer sneakers only), neutral new balance 550s. leaning towards white sneakers — with a accent color (green, maybe?)
