sweet potato wedges w/ hot honey, sour cream, scallions & cotija
hi friends, lovers, & people probably related to me —
122 — did you miss me? yes or yes
also i bought some new running shoes, colorful ones (gasp, these) and am ~ officially ~ starting to run more miles / train for the marathon. you can donate to support the chicago parks foundation here, which would be much appreciated & you might get a small homemade treat out of it once the race is done!
sour cream & onion dip adjacent
a couple of months ago ryan and i went to brasero and had phenomenal almost decadently rich sweet potato. so when we wanted to do a steak night last week some sort of sweet potato seemed like the most logical thing to do. also we also had just had some lil roasted baby potatoes earlier that week & you know you have to diversify your potato consumption.
ingredients
1 large sweet potato (either the japanese white ones or your classic orange fleshed ones)
1 jalapeño
3 large cloves of garlic
a pinch of red pepper flakes
salt & pepper
1 bunch of scallions
a handful of pepitas
honey
cotija cheese
sour cream, daisy ofc
olive oil
steps
1st — peel your sweet potatoes and cut into wedges/ spears, if you’re me — splitting the potato in half was the exact moment i realized i need my knives to be sharpened. once the potatoes are cut up toss generously with olive oil, salt & pepper. roast @ 450 till one side is burnished and then flip them, roast till done they should be slightly crispy & charred on the outside while the inside is pure pillow(y) goodness. slice your jalapeño & your garlic — then char the jalapeño in a little bit of oil, till deeply fragrant — once done using a slotted spoon or spatula remove the jalapeño leaving the oil, with that oil fry the small garlic slices then set everything aside. finely chop all of that up and mix into warm honey with a little bit of red pepper flakes & salt. save the oil for something else, like salad dressing, etc.
2nd — okay so your potatoes are close to being done, this is the time to crumble the cotija & slice the scallions. once the potatoes are done toss with a bit more salt & pepper than add a swoop of sour cream to a blate (bowl plate) layer the potatoes, generously drizzle the hot honey, the pepitas, the queso fresco & the scallions
particularly good things i consumed recently
strapoli w/ ryan for a nice wednesday dinner. their pizza has great flavor but could use an extra second in the oven, my same qualm with spacca — i just don’t want my toppings to slide. it’s an adorable spot though & byob, they keep little wine glasses & an opener right at the front so you can bring a bottle of lambrusco & relax.
a lil weekend in the burbs w/ molly. meg meg had her play (which she was great in ofc) — so i was the soccer mom, we got pie life (joe’s new place (previously orno’s & slice spot) it’s the best it’s ever been & if you’re out in the dirty 630 a must have, then we got los after all the soccer of course but before we dropped off the prom dress to get hemmed (this is the taco place that has my favorite al pastor, salsa squeeze bottle trio & the best tortillas), andy’s (boot daddies eaten outside ofc), then we made chicken caesar salad wraps & fries for a late dinner + watched some 90s law & order — 10/10 notes
a long run & a bike ride across the city to see ryan on a beautiful sunday where we sat outside @ little wok which sneakily has the best shishitos in the city — they fry little balls of fresh mozz in with them & the garlic, i’ve never had anything like it
in that 3rd week of april all my friends had 30th birthdays. (kelli, kaitlyn, & megan) wish them a happy belated one because they are great!
goodbye 2805. em & i threw one last party in the apartment we spent the most formative years of our 20s in. bittersweet but a nice lil send off for the most constant thing in our lives & also the pizza i made might have been the best one yet. potentially a longer essay to come about that apartment & all that it mean(s).
aakhoshi ramen. finally made it — just put our name in & had a couple of drinks @ spilt milk for the wait. it was phenomenal, definitely worth the hype.
humbloldt haus & aztec dave’s — supporting the move when we need it most. one sandwich or taco @ a time
grand rapids for bridge’s graduation — a quick lil trip to see bridge skip across the stage, we celebrated with her friends & some detroit style pizza & some spritzes. so freaking proud of you!
burgers! — this taste specific spread in chicago mag really is what i feel consuming things is all about, sharing what you like. def agree about leavitt, best intentions & rhr — excited to try a couple i overlooked. should i do my own list?
anyone but you — honestly really enjoyed it. but i’ve been a glen powell fan since set it up & a complete sucker for a fun rom com.
