midweek mini #2

hi friends, lovers & people probably related to me —

with all this rain, every other girl in the loop is wearing a trench coat, like they’re a detective. it’s me i’m every other girl in the loop. i’m also a detective.

repurposing leftovers — over valentine’s day weekend ryan bought us some goat off the street & i made birria out of it. you can read more about that adventure here. but it obviously made it a lot and i froze some for future us. was going to make flautas with the leftovers but ryan wanted to think outside the box a little bit. so i thickened the consommé with a bit of cornstarch, crisped up the left over birria, made a little chimichurri, and what could only be described as mexican mashed potatoes. yukon golds boiled till very tender and combined with crema, kerrygold butter, roasted poblanos, scallions, oaxaca cheese, white cheddar and lots of salt & pepper. we had it for dinner on friday & breakfast sunday morning ( i made the leftover mashed potatoes into potato pancakes & topped everything with an egg). ryan said it’s one of the best things i’ve ever made.

if we had any more leftovers these would've been made into empanadas as well

cheeky afternoon sodas — a couple of weeks ago, when we first started getting warm weather i started occasionally getting a cheeky lil afternoon soda.¹ it’s a remarkably cheap & a fantastically fizzy pick me up. (preferred sodas are a mexican glass bottle coke, a medium size fountain diet coke or a mini can of ginger ale). you should get one for yourself today.
