hot for frittata
last year in fall of 2022 i made a frittata after watching this funny alison roman video (the more i watch her videos the more realizing that i’m also using her for style inspiration.) it was tasty, but i also promptly forgot about it. fast forward to earlier in december when i was drinking horchata. i realized i had a lot of eggs that were going to expire soon — so i had janel over for frittata. it was lovely. honestly lets do more weekend morning/day hangs in 2023.
ingredients
bacon
eggs (6-8 large eggs)
kale
tiny potatoes
sharp white cheddar
red onion
whole grain mustard
dijon mustard
lemon
mayo
garlic
flaky salt
salt & pepper
olive oil
steps
1st put on the pop punk brunch playlist (if you’re making this for dinner, put on a different playlist) take a handful of tiny potatoes and boil them in salted water till they are fork tender. you’re going to crush them using a glass and roast them in the oven with a lot of olive oil, salt & pepper at like 400 till they are brown & crispy. while that’s going on crisp up some bacon in a skillet or in the oven with the potatoes (about half a package), then char the shit out of a whole big bunch of kale (in a cast iron, with some salt+ pepper & olive oil), once that’s all done add red onions to the kale to soften & get less bite(y).
2nd whisk together a lil mayo, dijon (whole grain & regular), a lil lemon, garlic, salt + pepper to taste — this is to swoosh under your frittata. shred some sharp white cheddar. oh look the potatoes are done. how exciting! crack 6-8 eggs (depending on how big your cast iron is, mine is v. big & i used 7) whisk together completely with some salt & pepper.
3rd add the bacon, potatoes, sharp white cheddar to the kale + onions — mix it around a bit. add some olive oil around the edges of the cast iron (be generous here, also maybe add a lil bacon fat). then pour the eggs into the cast iron cook till they are set + then bake in like a 400-425 oven for 10-15 minutes. now the fun part, using a plate cover your frittata & flip it. slide it back into the cast iron & finish crisping it up on the stove.
4th let the frittata cool slightly + make some swooshes, then cut yourself + your janel a wedge. sprinkle with flaky salt
