baby breakfast burritos

126 — 30 feels good so far, less overwhelming than the end of 29 where i had a bit of an internal panic about everything i hadn’t accomplished by the end of my 20s (which included sending out two newsletters in august lol). anyway i feel really excited about this new decade, that’s all!
back to school
confession, i haven’t been in school in quite awhile and also i started making these lil breakfast burritos in july. but there’s something about september that always feels like a fresh start. maybe it’s bc my birthday is @ the tail end of august, maybe bc my mom is a teacher or maybe it’s because i have sisters whose lives are measured, by quarters, semesters, trimesters whatever. i used to make breakfast burritos exclusively using the worlds’ largest tortillas a la lula cafe see here & here - when i wouldn’t eat anything else all day unless i was hungover, hungry or had run 12-15 miles earlier that day. lately i have been making them a bit smaller these days - easier to prep, to transport , to consume - like a loaded breakfast taco but tidy(er).
filling wise you could chose your own adventure or you could just listen to me. these are great with just a lil cholula & sour cream, but they are elite with the avocado salsa from cermak produce. a salsa that will change your mind about all other salsas.
this recipe makes 5-6 burritos & they freeze excellently in case you were wondering.
ingredients
4/5 eggs ( the good kind, where they like name the ckickens, & the yolks are almost orange)
monterey jack (shredded fresh from the block, good melt & nice tang)
small/medium small tortillas (they should be flexible & soft, ideally translucent in places but we can’t have everything so store bought mission ones will do)
1 can of black beans
1-2 big cloves of garlic
half a can of chipotle chilis in adobe
quarter to half/ a onion - chopped
bacon (preferably thick sliced)
olive oil
salt & pepper
butter
steps
1st i would honestly put on a podcast, playlist, law & order @ an ambient volume to start bc we’re going to be in the kitchen for a lil while. my current spotify daylist is called: divorced dad sunday drive time. do with that what you will
2nd start the beans! cook down half a package of thick cut bacon that have been cut into short strips, with some chopped onions + 2 large cloves of grated garlic, then add a half a can of chipotle peppers in adobo let meld a bit and when the bacon is cooked through dump in the can of black beans let it come a boil, till the liquid is reduced a bit, then mash together with a spoon or potato masher while still on the heat, taste and season with salt + pepper. let them hangout on low for a bit to thicken. while the beans are cooking shred the cheese & scramble a few (4-5) eggs. you scramble them however you like. i’m just partial to cooking them in butter with salt & pepper.
3rd heat your tortillas in the microwave so they are flexible. add your fillings to them& then roll your tiny lil burritos nice & tight. then toast them in a hot skillet till burnished on both sides. once cool enough to touch either eat immediately or roll them in lil tinfoil blankets & label them for the week.

summer activities — janel & mike got married! which was lovely & beautiful & local & i fell asleep in my fake eyelashes, starved rock for a lil late afternoon hike — highlights were the soft serve & fried chicken afterwards ofc. florida, to see joan, to eat a lot of seafood, to have mojitos & mexican, to watch columbo, to walk on the beach & to swim in the ocean ( which honestly is the best place to swim, don’t @ me). michigan, for summer camp aka maybe babies girls weekend. we took a pontoon boat to our rental! we ate lots of chips, we explored, we talked, we played lots of games! we wore youswim bathing suits! a blast as always. birthday dinner w/ janel, kaitlyn, em & kelli — ryan made us martinis (gin w/ lemon twist ofc) & i made us malfadine a la mk (recipe coming soon), a crispy chicken pepperoncini cae sal & kaitlyn made ina garten’s lemon bars which are a dessert game changer. madison — ryan & i had such a blast. we had cheese curds, we had spotted cow, we went to sardine for the best moules frites & sparkling rose, we biked to dinner & back & all around one of the lake(s). diversey on an early saturday evening to catch up, have some wine, pick up wine club & have a nice walk home
tv shows — honestly all i’m watching is : veep, only murders (the new season), & homcide (which is now on peacock & the precursor to the wire & law & order, so iconic). i did also watch two episodes of that new nicole kidman being rich murder show. it’s fine & unintentionally funny. will probably watch the rest of it.
books — margo has money troubles & the coast road, these books are both v. different from each other but they are both tightly & well written. you’ll tear through them & then we can talk! also the kismet cookbook is v. good & ryan has left sticky notes on nearly every page — looks like I’ll have to buy it
